Macaroni Cheese

A simple macaroni cheese with broccoli and sweetcorn. Can be frozen before baking.

Ingredients

  • 300g pasta (being good: 225g)
  • 240g broccoli
  • 240g sweetcorn
  • 250g cheese (being good: 180g)
  • 50g butter (being good: 25g)
  • 50g plain flour (being good: 25g)
  • 600ml milk (being good: 300ml)

Method

Cook the pasta

  1. Boil the pasta for 2 mins less than stated on the pack, then drain.

Make the cheesy sauce

  1. Melt the butter in a saucepan.
  2. Stir in the plain flour.
  3. Cook for 1 min more.
  4. Gradually whisk in the milk until you have a lump-free sauce.
  5. Simmer for 5 mins, whisking all the time until thickened.
  6. Take off the heat, then stir in the cheese.

Mix together

  1. Add some pasta to the baking tray and then some cheesy sauce.
  2. Once that is mixed, add some of the veg.
  3. Repeat until all pasta, sauce and veg are added and mixed together.

Oven cook

Bake for 20 mins at 180°C until crisp and golden.


Can be frozen before baking – defrost thoroughly before cooking.
