Macaroni Cheese
A simple macaroni cheese with broccoli and sweetcorn. Can be frozen before baking.

Ingredients
- 300g pasta (being good: 225g)
- 240g broccoli
- 240g sweetcorn
- 250g cheese (being good: 180g)
- 50g butter (being good: 25g)
- 50g plain flour (being good: 25g)
- 600ml milk (being good: 300ml)
Method
Cook the pasta
- Boil the pasta for 2 mins less than stated on the pack, then drain.
Make the cheesy sauce
- Melt the butter in a saucepan.
- Stir in the plain flour.
- Cook for 1 min more.
- Gradually whisk in the milk until you have a lump-free sauce.
- Simmer for 5 mins, whisking all the time until thickened.
- Take off the heat, then stir in the cheese.
Mix together
- Add some pasta to the baking tray and then some cheesy sauce.
- Once that is mixed, add some of the veg.
- Repeat until all pasta, sauce and veg are added and mixed together.
Oven cook
Bake for 20 mins at 180°C until crisp and golden.
Can be frozen before baking – defrost thoroughly before cooking.
