Boil the pasta for 2 mins less than stated on the pack, then drain.

Make the cheesy sauce

Melt the butter in a saucepan.

Stir in the plain flour.

Cook for 1 min more.

Gradually whisk in the milk until you have a lump-free sauce.

Simmer for 5 mins, whisking all the time until thickened.

Take off the heat, then stir in the cheese.

Mix together

Add some pasta to the baking tray and then some cheesy sauce.

Once that is mixed, add some of the veg.

Repeat until all pasta, sauce and veg are added and mixed together.

Oven cook

Bake for 20 mins at 180°C until crisp and golden.

Preheat the oven to 200°C (180°C fan) / Gas mark 6. Line two baking trays with parchment paper.

Unroll the puff pastry onto a lightly floured surface. Brush the surface with beaten egg.

If using, spread a thin layer of Dijon mustard over the pastry.

Scatter the grated cheese evenly over half the pastry. Sprinkle with cayenne pepper or paprika.

Fold the uncovered half of the pastry over the cheese-covered half and press gently.

Brush the top with more beaten egg, then scatter over any remaining cheese.

Cut the pastry into strips roughly 1cm wide and twist each strip several times.

Lay the twists on the prepared baking trays and bake for 12–15 minutes until golden and crisp.

Leave to cool slightly on the tray before serving. Best eaten the same day.
